Ok, granted it does aspect a bit suchlike salad, and it's a far cry from the reassuring stacks of pancakes, Oriental recipes (same my competition Benne Cowardly), hot smoothies or beverage herb oat cookies that I mostly spot.However, this Guacamole and Egg Breakfast Bowl is pretty darn amazing.

This Guacamole and Egg Breakfast Bowl contains homemade mild guacamole (I held off on the garlic and fresh chillies – it is breakfast after all), sliced up egg, baby spinach and a lovely dollop of sour cream. The sweet chilli sauce is optional – but if you’re in two minds, then definitely go for it!
INGREDIENTS
- 1 egg room temperature
- 1 cup baby spinach leaves
- 1/8 red onion peeled and finely sliced
- 1 small piece toast chopped into chunks
- 1 tbsp sour cream
- 2 tsp sweet chilli sauce
- Pinch black pepper
Guacamole:
- 1 ripe avocado peeled, de-stoned and roughly chopped
- 1/8 red onion peeled and finely chopped
- 1 tbsp chopped coriander/cilantro
- Pinch of salt
- Pinch of pepper
- Juice of half a lime
DIRECTIONS
- Place the egg in a pan of shivery wet, create to the moil, then simmer for 5-6 minutes. Locomote off the emotionalism and course off the liquid. Tell the egg to alter (you can put it in any temperature element to speed up the process if you similar). Pol the egg and slice in half.
- Now get the guacamole by mashing all of the guacamole ingredients unitedly.
