Ingredients


  • 500 g Green lentil from Puy AOC
  • 150 g Smoked bacon
  • 200 g Cantal in-between
  • 3 Shallot
  • 1 cluster Chasselas white grape from Moissac
  • 5 c. soup Nut oil
  • 5 cl Dry white wine
  • 1 C. soup Strong mustard
  • Cell
  • Ground pepper

Instructions


  1. Put the lentils in two and a half times their volume of cold water. Cook them for 35 minutes.
  2. Peel the shallots, slice them. Brown the bacon in a hot pan. Detail the cantal in dice. Spread the bunch of Chasselas under the water, rub it. Dry the kernels in paper towels.
  3. In a salad bowl, mix the mustard, the white wine, the oil and the chopped shallots. Give a few rounds of pepper mill.
  4. Drain the lenses well. Pour them still hot in the sauce. Salt them. Add bacon, cantal dice and grapes. Stir gently. Serve without delay.
