Ingredients
- 1,5 kg Beef palteron cut into pieces by the butcher
- 150 g Lean breast bacon
- 2 Clove garlic
- 4 Onion
- 4 Carrot
- 250 g Celeriac
- 1 Bouquet garni
- 75 cl White wine (sauvignon)
- 4 c. soup Peanut oil
- Cell
- ground pepper
Instructions
- Cut the bacon into small bacon pieces. Peel the onions and garlic cloves, slice them.
- Boil the white wine. Out of the fire, flambé it to eliminate all the alcohol.
- Heat the oil over high heat in a cast iron pot. Brown the pieces of meat on all sides. When they are golden brown, remove them.
- Brown the bacon in the pan. Remove them.
- Put the onions and garlic in the casserole with 2 tbsp. of water. Scrape the bottom with a spatula to detach the caramelized juices. Cook for 5 minutes on low heat. Put back the meat and bacon. Add the bouquet garni, pour the wine. Salt, pepper. Cover and let simmer for 2 hours.
- Peel carrots and celery, cut into small pieces. Add them to the meat, mix and cook for another hour over low heat.
