Ingredients


  • 1,5 kg Beef palteron cut into pieces by the butcher
  • 150 g Lean breast bacon
  • 2 Clove garlic
  • 4 Onion
  • 4 Carrot
  • 250 g Celeriac
  • 1 Bouquet garni
  • 75 cl White wine (sauvignon)
  • 4 c. soup Peanut oil
  • Cell
  • ground pepper

Instructions


  1. Cut the bacon into small bacon pieces. Peel the onions and garlic cloves, slice them.
  2. Boil the white wine. Out of the fire, flambé it to eliminate all the alcohol.
  3. Heat the oil over high heat in a cast iron pot. Brown the pieces of meat on all sides. When they are golden brown, remove them.
  4. Brown the bacon in the pan. Remove them.
  5. Put the onions and garlic in the casserole with 2 tbsp. of water. Scrape the bottom with a spatula to detach the caramelized juices. Cook for 5 minutes on low heat. Put back the meat and bacon. Add the bouquet garni, pour the wine. Salt, pepper. Cover and let simmer for 2 hours.
  6. Peel carrots and celery, cut into small pieces. Add them to the meat, mix and cook for another hour over low heat.
